Recipe Corner with Chef Fatty: Vegan Sloppy Joes

Vegan Sloppy Joes

(I will let you all know I am a proud carnivore, have a pathilogical fear of pigs, and think all things living are delicious. But I have some vegan friends and I came up with these in a jam.)



3/4 cup of Quinua
One large Onion chopped
1 Green Pepper diced
3/4 cup Ketchup (usually organic cause they actually care about that stuff.)
2 tbls of Suger
1tsp Mustard
1 tbls White Vinger
1tsp Salt Water or Vegetable Stock

Add Peppers, Onion, wet ingredients and Quinoua to pot. Keep slowly adding liquid (stock or water) and stirring until the Quinoua begins to swell and startch out. Serve on buns or in a bowl.

It will be kind of like a risotto  It should end up with a similer mouth feel to ground beef. It's simple and good. If you want more sauce double the sauce recipe.
